Taco Stew



Ingredients:
  • 1 lb ground beef
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 can whole kernel corn, drained
  • 1 can pinto beans, drained
  • 1 can black beans
  • 1 can (14-1/2 ounces) diced tomatoes, drained
  • 1 (14 1/2-ounce) can Mexican-style stewed tomatoes (Rotel?)
  • 1 can tomato sauce
  • 1 cans diced green chilis (undrained)
  • 1 envelope (1oz) taco seasoning
  • 1 envelope (1oz) ranch dressing
  • Corn chips, shredded cheddar cheese, olives and/or sour cream, (garnish)

Directions

  • In a large saucepan, brown ground beef, green peppers and onion; drain. 
  • Add corn, beans, tomatoes, tomato sauce, chilis and taco seasoning. 
  •  Cover and simmer for 1 hour, stirring occasionally. 
  • Serve with corn chips, cheese and/or sour cream if desired. Yield: 4-6 serving (1-1/2 quarts).
