Ingredients:
- 1 lb ground beef
- 1 medium onion, chopped
- 1 green pepper, chopped
- 1 red pepper, chopped
- 1 can whole kernel corn, drained
- 1 can pinto beans, drained
- 1 can black beans
- 1 can (14-1/2 ounces) diced tomatoes, drained
- 1 (14 1/2-ounce) can Mexican-style stewed tomatoes (Rotel?)
- 1 can tomato sauce
- 1 cans diced green chilis (undrained)
- 1 envelope (1oz) taco seasoning
- 1 envelope (1oz) ranch dressing
- Corn chips, shredded cheddar cheese, olives and/or sour cream, (garnish)
Directions
- In a large saucepan, brown ground beef, green peppers and onion; drain.
- Add corn, beans, tomatoes, tomato sauce, chilis and taco seasoning.
- Cover and simmer for 1 hour, stirring occasionally.
- Serve with corn chips, cheese and/or sour cream if desired. Yield: 4-6 serving (1-1/2 quarts).
