Sweet Russian Beef & Cabbage Soup

When I first saw this recipe it just seemed weird to me. Sweet ground beef and cabbage? So glad I gave it a try however. Okay, it is a bit unusual in taste, but oh so good. Try it. You'll like it.



SWEET RUSSIAN BEEF AND CABBAGE SOUP

Ingredients

• 2 pounds ground lean beef 
• 2 (14.5 ounce)can diced tomatoes
• 1 (8 ounce) can tomato sauce
• 5 tsp of Better than Beef Bouillon
• 2 medium carrots shredded
• 1 onion chopped
• 1/4 cup white vinegar
• 1/4 cup white sugar 
• 1/4 cup brown sugar
• 1 ½ teaspoons salt
• ½ teaspoon ground black pepper
• 1 1/2  quarts water, divided
• 3 cloves garlic finely chopped
• 1 small head cabbage cored and roughly chopped

Directions

  1. Crumble the ground beef into a large pot and brown, drain the fat.
  2. Add the tomatoes, tomato sauce, Better than Bouillon, carrots, onion, vinegar, sugars, salt and pepper. Pour in 1 quart of water and bring to a boil. Stir to break up the beef while cooking. Once the soup come to a boil, cover and simmer for 30 minutes over low heat.
  3. Pour in another  ½ quart of water and return to a slow boil. Add garlic and cabbage. Simmer for 30 minutes until cabbage is tender, Ladle into soup bowls to serve.
