Chicken Tortilla soup



• 1 T chopped garlic
• 1 large onion diced
• 1 green pepper diced

sauté together in olive oil until translucent
place in large pot then add…

• 2 cans chicken stock
• 1 can diced tomatoes (undrained)
• 1 can original Rotel tomatoes (undrained)
• 1 can black beans (drained)
• 1 can corn (drained)
• 1 4oz can green chilis (undrained)
• 1 can tomato soup

season with…
• 2 T parsley flakes
• ½ t cumin
• 1 t cilantro
• salt and pepper to taste

bring to a boil
then reduce heat to a simmer
add 2 chicken breasts baked and shredded
thicken with cornstarch if needed (1/4 c water with 2T cornstarch)

simmer for 1-1½ hours and serve with your choice
sour cream
taco chips
shredded cheese
avocado
hot sauce (to taste)


This is a great soup to make to use up 
that leftover Thanksgiving turkey also
