Mac 'N Cheese


                                                    

Okay, I know not a soup, but Macaroni and Cheese is SO good and just like soup it's a great side to many meals or great all by itself. In this recipe I have combined what I consider the best of mac 'n cheese recipes I have seen, just for my granddaughter who LOVES Mac n Cheese



Ingredients:
• 1 16oz bag of elbow macaroni
• ½ t salt
• ½ teaspoon onion powder
• ½ teaspoon paprika
• ¼ teaspoon white pepper
• ¾ cup butter softened and divided
• 2 tablespoons all purpose flour
• 1 cup sour cream
• 3 tablespoons cream cheese softened
• 2 eggs whisked
• 1 cup evaporated milk
• 16 oz (or more to taste) cheese (your choice but at least half is sharp cheddar) sharp cheddar, monterey jack, mozzarella, mild cheddar, gorgonzola etc. (I used 1/2 sharp cheddar and 1/2 monterey jack
a sprinkle of paprika for the top

Directions:
• Preheat oven to 375
• Boil macaroni about 7-8 min to al dente ( it will soften more when baked) in lightly salted water 
• Drain (do not rinse) and put in large bowl.
• Add ½ cup butter, cubed, to noodles and stir through
• With remaining quarter cup butter and flour make a roux
• Into the roux add the salt, onion powder, pepper, paprika, eggs and milk, whisking continuously.
• Add sour cream, cream cheese, cheeses, continue to whisk (save a bit of cheddar reserved for the top)
• Mix sauce and noodles together and put into 9x12 baking dish
• Top with remaining cheese
• Sprinkle paprika across top. (This adds little in flavor but great for presentation)
• Bake until heated through and top is browning which is about 20-25 minutes



• Be generous with the cheese and don't buy the pre shredded in a bag stuff. They coat that with cornstarch or something to keep it free flowing but it won't be creamy or mix right. This is also true of cheese put into soups. Shred it yourself. Sure, its more work but worth it.
• some folks also like to top this dish with 1/4 cup of panko, crushed crackers or bread crumbs combined with 1/2 stick of melted butter
