This soup is one of my hubby's favorites.
Ingredients:
• 1.5 lb. Sweet mild Italian sausage
• 1 T. minced garlic
• 1 onion diced
• 2 thinly slice carrots
• 1 celery stick thinly sliced
• 2 (14.5 oz) cans Italian-style stewed tomatoes
• 1 large can crushed tomatoes
• 1 large can of spinach or mixed greens
• 1 (14.5 oz) can of zucchini
• 1 (15.5 oz) can cannellini beans (drain slightly )
• 1/2 c. ditalini pasta (cooked)
• 1 T. oregano
• 2 t. basil
• 1/4 t. salt
• 1/4 t. black pepper
• 1 T. white sugar
• splash or two of hot sauce (your taste)
• a sprinkling of shredded parmesan
Directions:
• In a fry pan, brown sausage with garlic and onion
• put the meat and all other ingredients EXCEPT salt and hot sauce into a large pot or dutch oven
• bring to a quick boil, cover and reduce heat to low
• simmer until veggies are nice and soft (2-3 hours)
• while soup is simmering prepare the pasta as per instructions
• Salt and hot sauce to taste (salt too early intensifies taste, you can always add more salt but you can't take it away, same with hot sauce)
• Bowl it up, add some of the ditalini and throw some freshly grated parmesan on top
• a glass of wine and some sliced Italian bread can only make it better.
• We aren't spicy sort of folk but if you are? Try spicy Italian sausage
• wanna use the crockpot? 4 hours on high, 6-8 on low
• cooked ditalini - I never put into soup until served, that way it won't get mushy
